Prepare a quick and flavorful meal featuring shrimp cooked in garlic butter served over rice.

  • 1 cup uncooked white rice
  • 2 cups water or broth
  • 1 pound raw shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Cook the rice according to package directions using water or broth. Keep warm after cooking.
  2. Pat the shrimp dry with paper towels and season lightly with salt and pepper.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the shrimp to the skillet in a single layer and cook for 1-2 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
  5. Reduce the heat to low. Add the butter to the same skillet.
  6. Once the butter melts, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic brown.
  7. Stir in the lemon juice.
  8. Return the cooked shrimp to the skillet and toss to coat them in the garlic butter sauce.
  9. Stir in the fresh parsley.
  10. Serve the garlic butter shrimp immediately over the warm cooked rice.

Notes

  • For extra flavor, use chicken broth instead of water to cook the rice.
  • You can add a pinch of red pepper flakes to the butter mixture for a little heat.
  • Do not overcook the shrimp; they cook very fast.
