4 (6 oz) salmon fillets, skin on or off
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons unsalted butter, melted
4 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon fresh dill, chopped
1 tablespoon fresh chives, chopped
1/4 cup fresh lemon juice
1 teaspoon lemon zest
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Pat the salmon fillets dry with paper towels. Rub the fillets with olive oil, then season evenly with salt and pepper. Place them on the prepared baking sheet.
In a small bowl, mix the melted butter, minced garlic, parsley, dill, and chives.
Spoon the garlic butter mixture evenly over the top of each salmon fillet.
Bake for 12 to 15 minutes, or until the salmon flakes easily with a fork. Cooking time depends on the thickness of the fillets.
While the salmon bakes, prepare the sauce: In a separate small bowl, whisk together the fresh lemon juice and lemon zest.
Once the salmon is cooked, remove it from the oven. Drizzle the lemon juice and zest mixture over the hot salmon fillets immediately before serving.
Notes
For pan-searing, heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the salmon skin-side down for 4 minutes. Flip, add the garlic butter mixture, and transfer the skillet to the preheated oven for 6-8 minutes until done.
To keep the salmon moist, do not overcook it. Check for doneness at the 12-minute mark.
Use fresh herbs for the best flavor in the sauce and butter mixture.
