4 (6 ounce) salmon fillets, skin on
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley, chopped
Instructions
Pat the salmon fillets very dry with paper towels. This step is crucial for crispy skin. Season both sides with salt and pepper.
Heat the olive oil in a large, oven-safe skillet over medium-high heat until shimmering.
Place the salmon fillets skin-side down in the hot skillet. Press down gently on each fillet for 10 seconds to ensure full contact with the pan.
Sear the salmon, without moving, for 4 to 6 minutes until the skin is deeply golden brown and crisp. Do not flip the fish yet.
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Flip the salmon fillets carefully. Add the butter to the skillet around the fish. Let the butter melt.
Add the minced garlic to the melted butter. Cook for about 30 seconds until fragrant.
Spoon the melted garlic butter mixture over the top (flesh side) of the salmon fillets repeatedly for about 1 minute.
Transfer the entire skillet to the preheated oven. Bake for 5 to 8 minutes, or until the salmon reaches your desired doneness (internal temperature of 145 degrees Fahrenheit).
Remove the skillet from the oven. Drizzle with fresh lemon juice and sprinkle with chopped parsley before serving immediately.
Notes
For the crispiest skin, ensure the pan is hot before adding the fish and pat the skin completely dry.
If your fillets are very thick, you may need to finish them entirely in the oven after searing the skin side for 3 minutes.
