4 (6 ounce) salmon fillets, skin on or off
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/4 cup fresh parsley, chopped
1 tablespoon lemon juice
Salt, to taste
Black pepper, to taste
Instructions
Pat the salmon fillets completely dry using paper towels. This step is key for crispy edges. Season both sides lightly with salt and pepper.
Heat the olive oil in a large, oven-safe skillet (cast iron works best) over medium-high heat until shimmering.
Place the salmon fillets skin-side down (if using skin-on) or presentation-side down into the hot skillet. Sear undisturbed for 4 to 5 minutes until the edges look golden brown and crispy.
Flip the salmon fillets. Reduce the heat to medium-low.
Add the butter to the skillet. Let it melt, then add the minced garlic and Italian seasoning. Baste the salmon continuously with the melted garlic butter mixture for 1 to 2 minutes.
Remove the skillet from the heat. Stir in the fresh parsley and lemon juice into the remaining butter sauce.
Serve the salmon immediately, spooning the garlic butter sauce over the top.
Notes
For extra crispy skin, ensure your skillet is very hot before adding the fish. Do not move the fish until the crust has formed.
If your fillets are very thick, finish cooking in a preheated 400°F oven for 5-7 minutes after searing.
