- 1 pound asparagus, trimmed
- 8 ounces cremini mushrooms, halved or quartered
- 4 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh lemon juice (optional)
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
- In a small bowl, combine the melted butter, minced garlic, salt, and pepper. Mix well.
- Place the trimmed asparagus and prepared mushrooms on the baking sheet.
- Pour the garlic butter mixture evenly over the vegetables. Toss gently with your hands or tongs until everything is fully coated.
- Spread the vegetables into a single layer on the baking sheet, avoiding overcrowding.
- Roast for 12 to 15 minutes, or until the asparagus is bright green and tender-crisp and the mushrooms are lightly browned.
- Remove from the oven. If using, drizzle with fresh lemon juice before serving.
Notes
- For best results, do not overlap the vegetables on the baking sheet; use two sheets if necessary to allow for proper roasting.
- If you prefer softer asparagus, roast for an additional 2 to 3 minutes.
- You can substitute olive oil for half of the butter if you prefer a lighter coating.
