1 pound chicken breasts, cut into bite-sized pieces
12 ounces pasta (fettuccine or penne recommended)
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 cup chicken broth
1/2 cup heavy cream
1 cup grated Parmesan cheese, plus more for serving
1/4 cup fresh parsley, chopped
1 tablespoon olive oil
Salt and black pepper to taste
Instructions
Cook pasta according to package directions until al dente. Reserve 1 cup of the pasta cooking water before draining.
Season chicken pieces generously with salt and pepper.
Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
Reduce heat to medium. Add the remaining 2 tablespoons of butter and minced garlic to the skillet. Cook for 1 minute until fragrant; do not let the garlic burn.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
Stir in the heavy cream and bring the sauce to a gentle simmer.
Remove the skillet from the heat. Gradually stir in the grated Parmesan cheese until the sauce is smooth. If the sauce is too thick, add reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
Return the cooked chicken to the skillet. Add the drained pasta and toss everything together until well coated.
Stir in the fresh parsley. Taste and adjust seasoning with more salt and pepper if needed.
Serve immediately topped with extra Parmesan cheese.
Notes
For extra flavor, add 1/2 teaspoon of dried Italian seasoning with the garlic.
If you want to add vegetables, stir in 2 cups of fresh spinach during the last minute of simmering the sauce until wilted.
Use high-quality Parmesan cheese for the best sauce flavor.
