Prepare simple, flavorful garlic butter chicken bites served over cooked rice for a quick dinner.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch bites
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1/2 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • 2 cups cooked white rice (for serving)

Instructions

  1. Season the chicken bites generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken bites and cook until browned on all sides and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
  4. Pour in the chicken broth and lemon juice. Bring the mixture to a simmer and let it reduce slightly, about 2 minutes, scraping up any browned bits from the bottom of the pan.
  5. Return the cooked chicken bites to the skillet. Toss them gently to coat them completely in the garlic butter sauce.
  6. Stir in the chopped fresh parsley. Taste the sauce and add more salt or pepper if needed.
  7. Serve the garlic butter chicken bites immediately over the cooked white rice.

Notes

  • For extra flavor, use low-sodium chicken broth.
  • You can substitute long-grain white rice with basmati or jasmine rice.
  • To make this a one-pan meal, cook the rice separately according to package directions while you prepare the chicken.
