Make this easy, one-pan Garlic Butter Chicken and Mushroom Skillet for a quick and flavorful weeknight meal. The chicken cooks in a rich, savory garlic butter sauce.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 pound cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the sliced mushrooms to the same skillet. Cook until they release their moisture and start to brown, about 5 minutes.
  4. Add the minced garlic to the mushrooms and cook for 1 minute until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  6. Reduce the heat to medium-low. Stir in the heavy cream, Italian seasoning, and butter until the butter melts and the sauce thickens slightly.
  7. Return the cooked chicken to the skillet. Stir to coat everything in the garlic butter sauce.
  8. Simmer for 2-3 minutes until the chicken is heated through.
  9. Stir in the fresh parsley just before serving.

Notes

  • Serve this skillet dinner over cooked rice, egg noodles, or with crusty bread to soak up the sauce.
  • For a tangier sauce, add 1 tablespoon of lemon juice with the heavy cream.
  • You can substitute spinach for half the mushrooms if you like greens in your skillet.
