Make a quick and colorful fruit pizza using refrigerated sugar cookie dough and a simple cream cheese frosting. This is a fun, easy dessert perfect for any gathering.

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 4 cups fresh mixed fruit (such as strawberries, blueberries, kiwi, mandarin oranges)

Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease a 12-inch pizza pan or line a baking sheet with parchment paper.
  2. Press the refrigerated sugar cookie dough evenly onto the prepared pan to form a large, flat cookie crust.
  3. Bake for 12 to 15 minutes, or until the edges are lightly golden brown. You want the center to be set but still soft.
  4. Let the sugar cookie crust cool completely on the pan. This step is important for the frosting.
  5. While the crust cools, prepare the cream cheese fruit pizza frosting. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Add the milk, one tablespoon at a time, beating until the frosting is light and spreadable.
  7. Once the cookie crust is cool, spread the cream cheese frosting evenly over the entire surface, leaving a small border like a pizza crust.
  8. Arrange your fresh mixed fruit decoratively over the frosting. You can create patterns or simply layer the colors.
  9. Chill the fruit pizza for at least 30 minutes before slicing and serving. This helps the frosting set.

  • For a fun variation, try making mini fruit pizza versions using pre-made sugar cookie dough cutouts instead of one large crust.
