Make this simple, refreshing frozen yogurt bark using Greek yogurt and fresh or frozen strawberries. It is a quick, no-bake dessert perfect for summer.

Ingredients

  • 2 cups plain Greek yogurt
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen strawberries, sliced or roughly chopped
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a medium bowl, mix the Greek yogurt, maple syrup, and vanilla extract until smooth.
  3. Spread the yogurt mixture evenly onto the prepared baking sheet, aiming for about 1/4 to 1/2 inch thickness.
  4. Arrange the strawberry pieces over the yogurt surface. Press them lightly into the yogurt.
  5. Sprinkle the chia seeds over the top, if using.
  6. Place the baking sheet in the freezer for at least 4 hours, or until completely firm.
  7. Once frozen solid, remove the bark from the sheet by lifting the parchment paper. Break the bark into irregular pieces.
  8. Store the pieces in an airtight container in the freezer.

Notes

  • For a swirl effect, mix half the strawberries into the yogurt before spreading, and place the remaining half on top.
  • You can use any type of yogurt, but Greek yogurt provides the best firm texture.
  • For added crunch, sprinkle 1/4 cup of granola or mini chocolate chips on top before freezing.
