Ingredients
Scale
1 1/2 cups blanched almond flour
2 large eggs
1/4 cup unsweetened almond milk (or milk of choice)
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract (optional)
1 tablespoon melted coconut oil or butter, plus more for the griddle
Instructions
In a medium bowl, whisk together the almond flour, baking powder, and salt.
In a separate small bowl, whisk the eggs, almond milk, and vanilla extract (if using) until combined.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few small lumps are fine.
Stir in the melted coconut oil or butter. The batter will be thick.
Heat a non-stick griddle or large skillet over medium heat. Lightly grease the surface with oil or butter.
Pour about 1/4 cup of batter per pancake onto the hot griddle. You should get 3-4 pancakes at a time.
Cook for 3 to 4 minutes per side. You know they are ready to flip when the edges look set and bubbles appear on the surface.
Flip carefully and cook for another 2 to 3 minutes until golden brown and cooked through.
Serve immediately with your favorite toppings.
Notes
For extra fluffy almond flour pancakes, let the batter rest for 5 minutes before cooking. This allows the almond flour to absorb the liquid better.
If you are making these keto pancakes, use a keto-approved sweetener like erythritol or monk fruit blend in place of sugar if your recipe calls for it (this recipe does not require added sugar).
To make these dairy-free, confirm your milk choice is non-dairy and use coconut oil instead of butter for cooking and mixing.
These pancakes freeze well. Cool completely, then place parchment paper between layers in an airtight container. Reheat in a toaster or oven.
