Ingredients
Scale
6 large eggs, hard-boiled and peeled
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1/4 cup finely chopped celery
2 tablespoons finely chopped red onion
1 tablespoon fresh dill, chopped (optional)
1 teaspoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Peel the hard-boiled eggs and place them in a medium bowl.
Use a fork or potato masher to coarsely mash the eggs. You want some texture remaining, not a smooth paste.
Add the mayonnaise, Dijon mustard, celery, red onion, dill (if using), and lemon juice to the bowl.
Gently mix all ingredients together until just combined. Avoid overmixing to keep some texture.
Season with salt and pepper. Taste and adjust seasoning as needed.
Cover the bowl and chill the egg salad in the refrigerator for at least 30 minutes before serving. This allows the flavors to blend.
Serve as an egg salad sandwich filling, on lettuce wraps, or with crackers.
Notes
For an extra bright flavor, add a pinch of paprika on top before serving.
If you prefer a smoother texture, use a food processor but pulse only 3-4 times to avoid turning it into a paste.
This recipe is great for meal prep; it keeps well in the refrigerator for up to four days.
