You can make this creamy, crowd-pleasing No-Bake Chocolate Eclair Cake using simple ingredients. It features soft graham cracker layers, vanilla pudding, and rich chocolate frosting, tasting just like classic eclairs without turning on your oven.

Ingredients

Scale
  • 2 (3.4 ounce) boxes instant vanilla pudding mix
  • 3 cups cold milk
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 1 (14.4 ounce) box graham crackers (about 40 full sheets)
  • 1 (9 ounce) can chocolate frosting
  • 1 tablespoon butter, melted (optional, for thinning frosting)

Instructions

  1. Prepare the vanilla pudding: In a large bowl, whisk together the instant vanilla pudding mix and cold milk for about two minutes until the mixture thickens.
  2. Gently fold the thawed whipped topping into the thickened pudding mixture until just combined. This creates your creamy filling.
  3. Prepare your pan: Line a 9×13 inch baking dish with plastic wrap, leaving an overhang on the sides to help lift the cake later.
  4. Create the first layer: Arrange a single layer of graham crackers across the bottom of the prepared dish. You may need to break some crackers to fit the edges.
  5. Add the filling: Spread half of the vanilla pudding mixture evenly over the graham cracker layer.
  6. Create the second layer: Top the pudding with another layer of graham crackers, fitting them snugly together.
  7. Add the remaining filling: Spread the rest of the pudding mixture over the second graham cracker layer.
  8. Create the top layer: Place the final layer of graham crackers on top of the pudding.
  9. Prepare the frosting: Place the chocolate frosting in a microwave-safe bowl. Microwave for 15 to 30 seconds until it is soft and spreadable. Stir in the melted butter, if using, to make it smoother.
  10. Frost the cake: Spread the warm chocolate frosting evenly over the top graham cracker layer.
  11. Chill: Cover the dish with plastic wrap (using the overhang) and refrigerate for at least 6 hours, or preferably overnight. Chilling softens the graham crackers, giving them a cake-like texture.
  12. Serve: Use the plastic wrap overhang to lift the entire cake out of the dish before slicing and serving your easy chocolate dessert.

Notes

  • For easier spreading of the chocolate frosting, warm it slightly in the microwave.
  • If you want a thinner chocolate topping, stir in one teaspoon of milk or water into the warmed frosting.
  • This make ahead dessert tastes best when chilled for a full 8 hours or overnight.
