- 1 cup long-grain white rice
- 1/2 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt, or to taste
- 1 1/2 cups chicken broth
- 1/2 cup tomato sauce
- 1/2 cup frozen peas and carrots mix (optional)
- Heat the vegetable oil in a medium saucepan over medium heat.
- Add the dry rice to the pan. Stir constantly for 3 to 5 minutes until the rice grains turn light golden brown. Watch carefully to prevent burning.
- Add the chopped onion and cook until soft, about 3 minutes.
- Stir in the minced garlic, cumin, oregano, and salt. Cook for 1 minute until fragrant.
- Pour in the chicken broth and tomato sauce. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan tightly, and simmer for 18 minutes without lifting the lid.
- Remove the pan from the heat. If using, gently stir in the frozen peas and carrots.
- Let the rice stand, covered, for an additional 10 minutes.
- Fluff the rice gently with a fork before serving.
Notes
- For a richer flavor, use low-sodium chicken broth.
- If you prefer a deeper red color, add 1 tablespoon of tomato paste with the tomato sauce.
- Do not skip toasting the rice; this step helps keep the grains separate and fluffy.
