  • 1 pound ground beef or sausage
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel), drained
  • 1 (16 ounce) package Velveeta cheese, cut into cubes
  • 1/2 cup milk (optional, for thinning)

Instructions

  1. Brown the ground beef or sausage in a large skillet over medium heat. Drain off any excess grease completely.
  2. Add the undrained can of Rotel tomatoes and green chilies to the skillet with the meat. Stir to combine.
  3. Reduce the heat to low. Add the cubed Velveeta cheese to the skillet. Stir constantly until the cheese is completely melted and the mixture is smooth and creamy.
  4. If the dip seems too thick, stir in the milk, one tablespoon at a time, until you reach your desired consistency.
  5. Stir in the drained can of Rotel tomatoes and green chilies. Heat through for about 2 minutes.
  6. Transfer the dip to a serving bowl. Serve hot with tortilla chips for the best game day appetizer experience.

Notes

  • For a slow cooker version, combine the browned meat, both cans of Rotel, and Velveeta in a small slow cooker. Cook on low for 1-2 hours, stirring occasionally until smooth.
  • If you prefer a cream cheese base instead of Velveeta, substitute 8 ounces of softened cream cheese for half the Velveeta and add 4 ounces of shredded Monterey Jack cheese for better melting.
  • You can prepare the meat ahead of time and store it in the refrigerator for up to two days before assembling the dip.
