2 lbs boneless, skinless chicken breasts
1 cup BBQ sauce (your favorite kind)
1/2 cup chicken broth
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Place the chicken breasts in the bottom of your slow cooker.
In a small bowl, whisk together the BBQ sauce, chicken broth, apple cider vinegar, smoked paprika, garlic powder, onion powder, salt, and pepper.
Pour the sauce mixture evenly over the chicken in the slow cooker.
Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is cooked through and easily shreds.
Remove the chicken breasts from the slow cooker and place them on a cutting board or in a large bowl.
Shred the chicken using two forks.
Return the shredded chicken to the slow cooker and stir it well to coat it completely with the remaining sauce.
Cook on warm for another 15 minutes to allow the flavors to combine.
Serve hot on buns for sandwiches or use in tacos or salads.
Notes
For extra flavor, add 1/4 cup of chopped onion to the slow cooker before cooking.
If the sauce seems too thin after shredding, remove the lid for the last 30 minutes of cooking on high to allow some liquid to evaporate.
This chicken freezes well for future meal prep. Store cooled chicken and sauce in an airtight container for up to 3 months.
