  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 cup chopped cucumber
  • 1 cup chopped bell pepper (any color)
  • 1/2 cup chopped red onion
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup fresh parsley, chopped
  • For the Dressing:
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Prepare the beans: Open all three cans of beans. Pour the contents into a colander and rinse them thoroughly under cold water until the liquid runs clear. Let them drain well.
  2. Combine vegetables and beans: In a large bowl, combine the rinsed beans, chopped cucumber, chopped bell pepper, and chopped red onion.
  3. Make the dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, dried oregano, garlic powder, salt, and pepper until well combined and slightly emulsified.
  4. Dress the salad: Pour the dressing over the bean and vegetable mixture. Toss gently until everything is evenly coated.
  5. Add cheese and herbs: Gently fold in the crumbled feta cheese (if using) and the chopped fresh parsley.
  6. Chill and serve: Cover the bowl and refrigerate the salad for at least 30 minutes before serving. This allows the flavors to meld. This is a great make ahead salad for your meal prep lunches.
