6 large eggs
1/2 cup shredded cheese (Monterey Jack or cheddar)
1/4 teaspoon salt
1/8 teaspoon black pepper
1 cup cooked, crumbled bacon (optional add-in)
1/2 cup cooked, chopped spinach (optional add-in)
Instructions
Preheat your oven to 300°F (150°C). Lightly grease a 12-cup muffin tin or use silicone liners.
In a blender, combine the cottage cheese, eggs, salt, and pepper. Blend until the mixture is completely smooth and creamy. This step is key for fluffy texture.
If using add-ins like bacon or spinach, gently stir them into the egg mixture in a bowl. Do not overmix.
Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full. Sprinkle the shredded cheese on top of each cup.
Bake for 20 to 25 minutes. The egg bites are done when they are set in the center and lightly golden.
Remove the muffin tin from the oven. Let the egg bites cool in the tin for 5 minutes before carefully removing them.

Notes
