1 pound ground beef
1 packet taco seasoning mix
1/2 cup water
1 head iceberg lettuce, shredded
2 large tomatoes, diced
1 cup shredded cheddar cheese
1/2 cup sliced black olives
1 cup crushed Nacho Cheese Doritos
1/2 cup sour cream
1/4 cup salsa
1 tablespoon chili powder
1 teaspoon cumin
Instructions
Brown the ground beef in a large skillet over medium heat. Drain any excess fat.
Stir in the taco seasoning mix and water. Cook according to seasoning packet directions, usually about 5 minutes, until the sauce thickens. Set aside to cool slightly.
In a very large bowl, combine the shredded lettuce, diced tomatoes, shredded cheddar cheese, and black olives.
In a small bowl, whisk together the sour cream, salsa, chili powder, and cumin to make the dressing.
Pour the meat mixture over the lettuce and vegetable mixture. Gently toss to combine.
Just before serving, add the crushed Doritos and gently fold them in. Do not overmix, or the chips will become soggy.
Serve immediately with extra dressing on the side if desired.
Notes
You can prepare the meat and dressing up to one day ahead. Store them separately in the refrigerator.
Assemble the salad just before serving to keep the Doritos crunchy.
Substitute ground turkey or black beans for ground beef for a different protein base.
