Make this simple, crowd-pleasing Dorito Casserole for a quick weeknight dinner. It features creamy chicken, savory sauce, and a crunchy topping.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup milk
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded cheddar cheese, divided
  • 1 (9 ounce) bag Nacho Cheese Flavored Tortilla Chips (Doritos), crushed
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked shredded chicken, cream of chicken soup, cream of mushroom soup, sour cream, milk, onion powder, garlic powder, salt, and pepper. Mix until everything is well combined.
  3. Stir in 1 1/2 cups of the cheddar cheese into the chicken mixture.
  4. Spread half of the crushed Doritos evenly over the bottom of the prepared baking dish.
  5. Pour the chicken mixture over the chip layer and spread it out evenly.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese and the Monterey Jack cheese over the top of the chicken mixture.
  7. Top the cheese layer with the remaining crushed Doritos. This is how you keep your topping crunchy!
  8. Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is lightly browned.
  9. Let the casserole rest for 5 minutes before serving.

Notes

  • For the crunchiest topping, reserve about 1/4 cup of the crushed chips and sprinkle them on top during the last 5 minutes of baking.
  • You can substitute ground beef for the chicken. Brown 1 pound of ground beef and drain the fat before mixing it into the sauce.
  • If you want a little heat, add 1/2 cup of drained diced green chiles to the chicken mixture.
  • This recipe works great for potlucks and game day gatherings.
