1 cup (200g) granulated sugar
3/4 cup (150g) packed light brown sugar
4 large eggs
1 teaspoon vanilla extract
1/2 cup (120g) smooth tahini
1 cup (120g) all-purpose flour
1/2 cup (50g) unsweetened cocoa powder
1/2 teaspoon salt
1/2 teaspoon baking powder
6 ounces (170g) dark chocolate (70% cacao or higher), chopped
1/2 cup (85g) dark chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Line a 9×9 inch metal baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly grease the exposed sides.
In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until combined.
Whisk in the eggs one at a time until fully incorporated. Stir in the vanilla extract and tahini until the mixture is smooth.
In a separate medium bowl, whisk together the flour, cocoa powder, salt, and baking powder.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Do not overmix.
Gently fold in the chopped dark chocolate and the chocolate chips.
Spread the batter evenly into the prepared pan.
Bake for 30 to 35 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment overhang.
Cut into squares and serve.
Notes
For a fudgier texture, slightly underbake the brownies by 2-3 minutes.
Use high-quality dark chocolate for the best flavor.
If you prefer a more intense sesame flavor, you can use slightly darker tahini.
