This is the easy Crockpot Marry Me Chicken recipe you need for a flavorful, hands-off weeknight dinner. Tender chicken cooks in a rich, creamy Parmesan sauce with sun-dried tomatoes, making it a family favorite that feels special.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts (or thighs)
  • 1 (14.5 ounce) can chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch (for thickening)
  • 2 tablespoons cold water (for slurry)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a medium bowl, whisk together the chicken broth, heavy cream, Parmesan cheese, sun-dried tomatoes, Italian seasoning, garlic powder, onion powder, salt, and pepper.
  3. Pour the cream mixture evenly over the chicken in the crockpot.
  4. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce.
  6. In a small bowl, whisk together the cornstarch and cold water to create a slurry. Stir the slurry into the sauce in the crockpot.
  7. Cover and cook on HIGH for 10 to 15 minutes, or until the sauce has thickened to your liking.
  8. Stir well to coat the chicken completely. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, you can sear the chicken breasts in a hot skillet for 2 minutes per side before placing them in the slow cooker.
  • If you prefer chicken thighs, use boneless, skinless thighs; cooking time remains similar.
  • Serve this Creamy Parmesan Chicken Slow Cooker dish over pasta, rice, or mashed potatoes to soak up the rich sauce.
  • For a tangier flavor, add 1 tablespoon of Dijon mustard to the sauce mixture.
