  • 1 clove garlic, minced
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Prepare the rice: Spread the day-old cooked rice in a thin, even layer on a baking sheet. Let it air dry on the counter for at least 1 hour, or place it in the refrigerator for 2 hours to dry out further. This step is key for crispy rice.
  2. Crisp the rice: Heat the neutral oil in a large skillet or wok over medium-high heat. Add the dried rice, spreading it into an even layer.
