1 large head broccoli, cut into bite-sized florets
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder (optional)
Instructions
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
Place the broccoli florets on a large baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure crisping.
Pat the broccoli florets completely dry using paper towels. This step is key to achieving crispiness.
Drizzle the dry broccoli with olive oil. Toss well to coat every piece evenly.
Sprinkle with salt, pepper, and garlic powder, if using. Toss again.
Spread the seasoned broccoli in a single layer on the baking sheet(s).
Roast for 15 minutes.
Remove the pan from the oven and sprinkle the grated Parmesan cheese evenly over the broccoli. Gently toss the broccoli on the pan to coat.
Return the broccoli to the oven and roast for another 5 to 10 minutes, or until the edges are deeply browned and crispy.

Notes
For extra crispiness, you can use the air fryer: Toss the oiled and seasoned broccoli with half the Parmesan, air fry at 380 degrees Fahrenheit for 10 minutes, then toss with the remaining Parmesan and cook for 2 more minutes.
Do not skip drying the broccoli; excess moisture creates steam, leading to soggy results.
Use freshly grated Parmesan for the best flavor and melting quality.
