Make crunchy chicken wraps using an air fryer for crispiness, paired with a zesty, homemade spicy ranch dressing.

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch strips
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1 large egg, beaten
  • 1/2 cup panko breadcrumbs
  • Cooking spray
  • 4 large flour tortillas
  • 1 cup shredded romaine lettuce
  • 1/2 cup diced tomato
  • 1/2 cup shredded Monterey Jack cheese
  • For Spicy Ranch Sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup buttermilk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried dill
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (adjust to heat preference)
  • 1/4 teaspoon salt

Instructions

  1. Prepare the chicken coating: In one shallow dish, mix the flour, salt, pepper, paprika, and garlic powder. In a second dish, place the beaten egg. In a third dish, place the panko breadcrumbs.
  2. Dredge each chicken strip first in the flour mixture, shaking off excess. Dip it into the egg, letting excess drip off. Finally, press the strip firmly into the panko breadcrumbs to coat completely.
  3. Preheat your air fryer to 380°F (195°C). Lightly spray the air fryer basket with cooking spray. Arrange the coated chicken strips in a single layer in the basket, avoiding overcrowding. Spray the tops of the chicken lightly with cooking spray.
  4. Air fry the chicken for 10 to 12 minutes, flipping halfway through, until golden brown and cooked through (internal temperature reaches 165°F or 74°C).
  5. Make the spicy ranch sauce: While the chicken cooks, combine the mayonnaise, buttermilk, lemon juice, dill, onion powder, garlic powder, cayenne pepper, and salt in a small bowl. Whisk until smooth.
  6. Warm the tortillas: Heat the flour tortillas briefly in a dry skillet or microwave until soft and pliable.
  7. Assemble the wraps: Lay a warm tortilla flat. Spread a generous amount of spicy ranch sauce down the center. Layer with shredded lettuce, diced tomato, shredded cheese, and 3-4 pieces of crispy air-fried chicken.
  8. Fold the sides of the tortilla inward, then tightly roll from the bottom up to secure the filling. Serve immediately.

Notes

  • For extra crispiness, you can lightly spray the breaded chicken again just before placing it in the air fryer.
  • You can prepare the spicy ranch sauce up to two days ahead and store it covered in the refrigerator.
  • If you prefer a different cooking method, you can bake the chicken at 400°F (200°C) for 15-20 minutes, turning once, or shallow fry until done.
  • Substitute chicken tenders for strips if preferred.
