1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1 large egg, lightly beaten
1/4 cup milk
1 cup panko breadcrumbs (for coating)
Vegetable oil, for frying
1 cup plain Greek yogurt
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped

Instructions
In a medium bowl, combine the ground chicken, flour, baking powder, salt, pepper, paprika, and garlic powder. Mix until just combined.
Stir in the beaten egg and milk until a thick batter forms around the chicken mixture. Do not overmix.
Place the panko breadcrumbs in a shallow dish.
Scoop the chicken mixture into tablespoon-sized portions. Gently flatten each portion slightly into a small patty shape.
Dredge each patty thoroughly in the panko breadcrumbs, pressing lightly so the crumbs adhere well to all sides.
Prepare the sauce: In a small bowl, mix the Greek yogurt, minced garlic, lemon juice, chopped parsley, and a pinch of salt. Stir until smooth. Cover and refrigerate until serving.
Heat about 1 inch of vegetable oil in a large, heavy-bottomed skillet over medium-high heat until the oil reaches 350 degrees Fahrenheit (175 degrees Celsius).
Carefully place the coated fritters into the hot oil, ensuring you do not overcrowd the pan. Work in batches if necessary.
Fry for 3 to 4 minutes per side, turning once, until they are deep golden brown and cooked through.
Remove the fritters from the oil using a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
Serve the hot, crispy chicken fritters immediately with the chilled garlic yogurt sauce.
Notes
For extra crispiness, chill the breaded fritters on a baking sheet for 15 minutes before frying.
If you prefer not to deep fry, you can shallow fry using less oil or bake at 400 degrees Fahrenheit for 18-20 minutes, flipping halfway.
You can substitute ground turkey for ground chicken if desired.
