2 tablespoons unsalted butter
2 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup whole milk
1/2 cup heavy cream
4 ounces cream cheese, softened
1/2 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
Pinch of nutmeg
Instructions
Melt the butter in a medium saucepan over medium heat.
Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
Whisk in the flour to create a roux. Cook for 1 minute, stirring constantly.
Gradually whisk in the milk until the mixture is smooth.
Bring the mixture to a simmer, stirring until it thickens slightly, about 3 to 5 minutes.
Reduce the heat to low. Whisk in the heavy cream and softened cream cheese until the cream cheese is fully melted and the sauce is smooth.
Stir in the Parmesan cheese, salt, pepper, and nutmeg. Continue stirring until the cheese melts completely and the sauce is uniform.
Remove from heat. Let the sauce cool slightly before spreading on pizza dough.
Notes
For a thicker sauce, simmer for an extra minute or two, or add 1/2 teaspoon of cornstarch mixed with 1 tablespoon of cold water during the milk addition step.
If you prefer a milder garlic flavor, use roasted garlic instead of fresh minced garlic.
This sauce spreads best when warm, not piping hot.
