Easy Creamy White Chicken Chili

Make this simple, high-protein white chicken chili on the stovetop or in a slow cooker for a comforting weeknight meal.

  • 2 cups cooked, shredded chicken
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can Great Northern beans, rinsed and drained
  • 1 (4 ounce) can diced green chiles, undrained
  • 1 cup frozen corn
  • 1 (10 ounce) can cream of chicken soup
  • 1 cup chicken broth
  • 4 ounces cream cheese, cut into cubes
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Combine the shredded chicken, cannellini beans, Great Northern beans, green chiles, corn, cream of chicken soup, and chicken broth in a large pot or slow cooker.
  2. Stir in the cumin, oregano, and garlic powder.
  3. If using the stovetop, heat the mixture over medium heat, stirring occasionally, until simmering. Reduce heat to low.
  4. Add the cream cheese cubes to the pot. Stir constantly until the cream cheese melts and the chili becomes creamy.
  5. If using the slow cooker, cook on low for 4 hours or high for 2 hours. Stir in the cream cheese cubes during the last 30 minutes of cooking until fully melted and smooth.
  6. Season with salt and pepper to your preference.
  7. Serve hot with your choice of toppings.

Notes

  • For a thicker chili, mash about 1/4 cup of the white beans against the side of the pot before adding the cream cheese.
  • Use rotisserie chicken to save time on cooking the chicken beforehand.
  • Add 1/4 cup chopped fresh cilantro to the chili for extra flavor.
