Make a very thick, creamy vanilla protein smoothie bowl perfect for a quick, high-protein breakfast.

Ingredients

  • 1 cup frozen cauliflower florets
  • 1 large frozen banana, broken into chunks
  • 1 scoop (about 30g) vanilla protein powder
  • 1/4 cup unsweetened almond milk (or less)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon xanthan gum (optional, for extra thickness)
  • 1 tablespoon chia seeds

Instructions

  1. Place the frozen cauliflower, frozen banana, protein powder, vanilla extract, chia seeds, and xanthan gum (if using) into a high-powered blender.
  2. Add only 1/4 cup of almond milk to start. You need very little liquid for a thick bowl.
  3. Start blending on low, using the tamper constantly to push the frozen ingredients down toward the blades.
  4. Add liquid one teaspoon at a time only if the blender completely stalls. The goal is a texture similar to soft-serve ice cream.
  5. Once smooth and very thick, immediately scoop the mixture into a bowl.
  6. Add your desired toppings and serve right away.

Notes

  • Use frozen cauliflower instead of extra banana to keep the sugar lower while maintaining a creamy, thick texture.
  • If your protein powder is very absorbent, you may need an extra splash of milk.
  • For a colder, firmer bowl, chill your serving bowl in the freezer for 10 minutes before assembling.
