Make this rich and comforting tomato soup featuring cheese tortellini. It is a simple, one-pot meal perfect for a weeknight dinner.

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste
  • Fresh basil leaves, chopped, for garnish

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the crushed tomatoes and vegetable broth. Stir in the oregano, dried basil, and red pepper flakes, if using. Bring the mixture to a simmer.
  4. Reduce the heat to medium-low, cover, and let the soup simmer for 10 minutes to allow the flavors to meld.
  5. Add the refrigerated tortellini to the simmering soup. Cook according to package directions, usually about 3 to 5 minutes, until the tortellini float and are cooked through.
  6. Remove the pot from the heat. Stir in the heavy cream and grated Parmesan cheese until fully combined and the soup is creamy.
  7. Taste the soup and season with salt and pepper as needed.
  8. Ladle the soup into bowls and garnish each serving with extra Parmesan cheese and fresh chopped basil.

Notes

  • You can substitute spinach tortellini for cheese tortellini.
  • For a heartier meal, add 1 cup of cooked, shredded chicken when you add the cream.
  • If you prefer a thicker soup base, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water, then stir this slurry into the simmering soup before adding the cream.
