1 pound pasta (spaghetti or linguine)
2 tablespoons olive oil
1 small yellow onion, finely chopped
3 cloves garlic, minced
28 ounces crushed tomatoes (good quality)
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
1/2 cup reserved pasta water
1/2 cup heavy cream (optional, for extra richness)
Salt and black pepper to taste
1 (8-ounce) ball fresh burrata cheese
Fresh basil leaves, for garnish
Instructions
Cook the pasta according to package directions until al dente. Before draining, reserve at least 1 cup of the starchy cooking water. Drain the pasta and set aside.
While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
Add the minced garlic and red pepper flakes to the skillet. Cook for 1 minute until fragrant.
Pour in the crushed tomatoes and add the dried oregano. Season with salt and pepper. Bring the sauce to a gentle simmer and cook for 10 minutes, stirring occasionally.
Stir in the heavy cream, if using. Add 1/2 cup of the reserved pasta water to the sauce and stir until the sauce thickens slightly. If the sauce seems too thick, add more pasta water, a tablespoon at a time.
Add the cooked pasta to the skillet with the sauce. Toss well to coat every strand evenly. Cook for 1 minute, allowing the pasta to absorb the sauce.
Divide the pasta among serving bowls. Tear the burrata ball into large pieces and place them over the hot pasta in each bowl. The heat from the pasta will slightly melt the cheese.
Garnish immediately with fresh basil leaves and serve.
Notes
For a no-cream version, rely only on the starchy pasta water to emulsify and thicken the sauce.
Use high-quality tomatoes; they make a big difference in simple tomato sauces.
Do not add the burrata until the moment you serve, as it melts quickly.
