Prepare a rich and flavorful pasta dish featuring tender chicken and a creamy sun-dried tomato sauce. This recipe yields a satisfying meal suitable for a weeknight dinner.

  • 1 pound pasta (fettuccine or penne recommended)
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sun-dried tomatoes packed in oil, drained and roughly chopped
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve 1/2 cup of the pasta water before draining. Set the pasta aside.
  2. Season the chicken pieces with salt and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Reduce the heat to medium. Add the chopped sun-dried tomatoes and minced garlic to the skillet. Cook for 1 minute until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes.
  6. Stir in the heavy cream. Bring the sauce to a gentle simmer and cook for 3 minutes, allowing it to thicken slightly.
  7. Reduce the heat to low. Stir in the Parmesan cheese until the sauce is smooth. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
  8. Return the cooked chicken to the skillet. Add the drained pasta and toss everything together until the pasta is well coated in the sauce.
  9. Stir in the fresh basil. Serve immediately.

Notes

  • For a richer flavor, use the oil from the sun-dried tomato jar instead of plain olive oil for cooking the chicken.
  • If you prefer a spicier dish, add 1/4 teaspoon of red pepper flakes with the garlic.
  • Use rotisserie chicken to reduce prep time for a quick dinner.
