Cook tender chicken breasts in a rich, creamy sauce made with ricotta cheese, spinach, and Parmesan in one skillet for a fast weeknight meal.

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1 cup chicken broth
  • 1 cup whole milk or heavy cream
  • 1 cup whole milk ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 5 ounces fresh spinach
  • 2 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped (optional)

Instructions

  1. Season the chicken breasts on both sides with salt, pepper, garlic powder, and oregano.
  2. Heat the olive oil in a large, oven-safe skillet over medium-high heat.
  3. Sear the chicken for 4 to 5 minutes per side until golden brown. Remove the chicken from the skillet and set it aside.
  4. Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
  5. Pour in the chicken broth and milk or cream, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
  6. Whisk in the ricotta cheese and Parmesan cheese until the sauce is smooth.
  7. Stir in the spinach and sun-dried tomatoes (if using). Cook until the spinach wilts down, about 2 minutes.
  8. Return the chicken breasts to the skillet, nestling them into the sauce.
  9. Cover the skillet and simmer on low heat for 8 to 10 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  10. Serve immediately directly from the skillet.

Notes

  • For a thicker sauce, simmer uncovered for an extra 3 minutes before returning the chicken.
  • Serve this dish over cooked pasta, rice, or with steamed green beans to soak up the sauce.
  • If you prefer a tangier flavor, substitute half of the ricotta cheese with cream cheese.
