1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 teaspoon salt
0.5 teaspoon black pepper
1 teaspoon garlic powder
0.5 teaspoon dried Italian seasoning
4 cloves garlic, minced
1 cup chicken broth
8 oz cream cheese, cubed
0.5 cup heavy cream
1 cup frozen chopped spinach, thawed and squeezed dry
1 (14 oz) can artichoke hearts, drained and roughly chopped
0.5 cup grated Parmesan cheese
Instructions
Season the chicken pieces with salt, pepper, garlic powder, and Italian seasoning.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Bring to a simmer.
Add the cubed cream cheese, stirring constantly until it melts and the sauce is smooth.
Stir in the heavy cream, dried spinach, and chopped artichoke hearts. Cook until the sauce thickens slightly, about 3 minutes.
Stir in the Parmesan cheese until fully incorporated.
Return the cooked chicken to the skillet and toss to coat everything in the sauce. Heat through for 1-2 minutes.
Serve immediately.
Notes
For a low-carb option, serve this dish over cauliflower rice or with steamed broccoli instead of pasta or rice.
You can substitute half of the heavy cream with milk if you prefer a slightly lighter sauce, though it will be less rich.
If you like extra cheese flavor, add 1/4 cup of shredded mozzarella along with the Parmesan.
