1.5 lbs salmon fillet, skin removed and cut into 1-inch cubes
1 tbsp butter
1 large leek, white and light green parts only, sliced
4 cups fish or vegetable broth
3 medium potatoes, peeled and diced
1 cup heavy cream
1/2 cup water
1 tsp salt
1/2 tsp black pepper
2 tbsp fresh dill, chopped
Instructions
Melt the butter in a large pot or Dutch oven over medium heat.
Add the sliced leek and cook until softened, about 5 minutes. Do not brown.
Pour in the broth and water. Add the diced potatoes. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 10 to 12 minutes.
Gently stir in the cubed salmon, salt, and pepper. Simmer for 5 minutes, or until the salmon is cooked through. Avoid stirring too vigorously to keep the salmon pieces intact.
Reduce the heat to low. Stir in the heavy cream. Heat through gently for 2 minutes; do not let the soup boil after adding the cream.
Remove the pot from the heat. Stir in the fresh chopped dill.
Taste and adjust seasoning if needed before serving.
Notes
For a richer flavor, you can substitute half of the water with dry white wine.
If you prefer a thicker soup, mash a few of the cooked potatoes against the side of the pot before adding the cream.
Use fresh, high-quality salmon for the best texture and taste.
