4 cups whole milk
1/2 cup granulated sugar
1 teaspoon vanilla extract

Instructions
Rinse the rice under cold water in a fine-mesh sieve until the water runs clear. Drain well.
Combine the rinsed rice, whole milk, sugar, cinnamon, and salt in a medium, heavy-bottomed saucepan.
Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring frequently to prevent the rice from sticking to the bottom.
Once simmering, reduce the heat to low. Continue to cook, stirring every few minutes, for 30 to 40 minutes. The pudding is done when the rice is tender and the mixture has thickened to your desired creamy consistency. Do not let it boil rapidly.
Remove the saucepan from the heat. Stir in the vanilla extract.
Serve the rice pudding warm, or transfer it to a bowl, cover the surface directly with plastic wrap to prevent a skin from forming, and chill completely before serving cold.
