Make this simple, one-pan creamy mushroom chicken skillet for a quick and satisfying weeknight dinner.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 pound cremini mushrooms, sliced
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the sliced mushrooms and chopped onion to the same skillet. Cook until the mushrooms release their liquid and start to brown, about 5 minutes.
  4. Add the minced garlic and dried thyme to the skillet. Cook for 1 minute until fragrant.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes to reduce slightly.
  6. Reduce the heat to low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
  7. Return the cooked chicken to the skillet. Stir to coat the chicken in the sauce. Heat through for 1-2 minutes.
  8. Garnish with fresh parsley before serving.

Notes

  • Serve this skillet meal over cooked pasta, rice, or with crusty bread to soak up the extra sauce.
  • For a thicker sauce, let the broth simmer longer before adding the cream.
  • You can substitute chicken thighs for breasts if you prefer dark meat.
