A recipe for traditional German cucumber salad featuring a rich, creamy dressing made with sour cream and vinegar.

  • 3 large cucumbers
  • 1 teaspoon salt (for draining)
  • 1/2 cup sour cream
  • 1/4 cup plain yogurt
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt (for dressing)
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh dill, chopped
  • 1/4 small red onion, thinly sliced (optional)

Instructions

  1. Wash and thinly slice the cucumbers. Place them in a colander set over a bowl. Sprinkle the 1 teaspoon of salt over the cucumbers. Let them sit for 30 minutes to draw out excess water.
  2. Gently squeeze the cucumbers with your hands or press them lightly with a paper towel to remove as much liquid as possible. Discard the liquid.
  3. In a medium bowl, whisk together the sour cream, yogurt, white vinegar, sugar, 1/2 teaspoon salt, and pepper until smooth.
  4. Stir in the chopped fresh dill and the optional sliced red onion into the dressing.
  5. Gently fold the drained cucumbers into the dressing until they are evenly coated.
  6. Cover the bowl and refrigerate the salad for at least 1 hour before serving to allow the flavors to meld.

Notes

  • Draining the cucumbers is key to preventing a watery salad. Do not skip this step.
  • This salad pairs well with grilled meats, bratwurst, or potato dishes.
  • You can make the dressing up to a day ahead and store it separately. Combine with cucumbers just before serving.
