1 tablespoon olive oil
1 small yellow onion, finely chopped
4 cloves garlic, minced
1 cup orzo pasta
3 cups chicken or vegetable broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese, plus more for serving
2 cups fresh spinach, roughly chopped
1 tablespoon butter
Salt and black pepper to taste
Instructions
Heat the olive oil in a large skillet or pot over medium heat. Add the chopped onion and cook until soft, about 4 minutes.
Add the minced garlic to the skillet and cook for 1 minute until fragrant. Do not let the garlic burn.
Add the orzo pasta to the skillet and toast for 1 minute, stirring constantly.
Pour in the broth. Bring the mixture to a simmer, then reduce the heat to medium-low. Cook, stirring occasionally, for about 12 to 15 minutes, or until the orzo is tender and most of the liquid is absorbed.
Stir in the heavy cream and butter until melted and combined.
Remove the skillet from the heat. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
Fold in the chopped spinach until it wilts into the pasta.
Season with salt and pepper to your taste. Serve immediately with extra Parmesan cheese on top.
Notes
For a richer flavor, use freshly grated Parmesan cheese instead of pre-shredded.
If the sauce becomes too thick while cooking, add a splash more broth or cream to reach your desired consistency.
You can substitute vegetable broth for chicken broth to make this dish vegetarian.
