2 lbs cauliflower florets
4 cloves garlic, minced
4 tablespoons butter
2 ounces cream cheese, softened
1/4 cup heavy cream
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Steam or boil the cauliflower florets until they are very tender, about 15 to 20 minutes. Do not overcook to prevent excess water absorption.
Drain the cooked cauliflower thoroughly. Place it on a clean kitchen towel or paper towels and press gently to remove as much excess moisture as possible. This step is key for creaminess.
Melt the butter in a small skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
Transfer the drained cauliflower to a food processor or a large bowl if using a hand mixer.
Add the sautéed garlic and butter mixture, cream cheese, heavy cream, salt, and pepper to the cauliflower.
Process or beat until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
Taste and adjust salt and pepper if necessary before serving hot.
Notes
For an even richer flavor, roast the garlic cloves instead of sautéing them before adding them to the mixture.
If the mash seems too thick, add heavy cream one tablespoon at a time until you reach your desired consistency.
Use a food processor for the smoothest, most potato-like texture.
