Creamy Garlic Chicken Thighs with Crispy Skin

Make juicy chicken thighs with perfectly crisp skin, finished in a rich, homemade garlic cream sauce.

  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pat the chicken thighs completely dry with paper towels. This step is key for crispy skin.
  2. Season the chicken thighs on all sides with salt, pepper, and paprika.
  3. Heat the olive oil in a large, oven-safe skillet over medium-high heat.
  4. Place the chicken thighs skin-side down in the hot skillet. Sear for 6 to 8 minutes without moving them until the skin is deep golden brown and crisp.
  5. Flip the chicken thighs and cook for 2 minutes on the second side. Remove the chicken from the skillet and set aside on a plate. Drain off most of the rendered fat, leaving about 1 tablespoon in the skillet.
  6. Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Do not let the garlic burn.
  7. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Let the broth simmer and reduce slightly for 2 minutes.
  8. Stir in the heavy cream and bring the sauce to a gentle simmer.
  9. Stir in the grated Parmesan cheese until the sauce is smooth and thickened. Taste and adjust salt and pepper if needed.
  10. Return the chicken thighs to the skillet, nestling them skin-side up into the sauce. Do not submerge the crispy skin.
  11. Transfer the skillet to a preheated oven at 375 degrees Fahrenheit (190 degrees Celsius). Bake for 15 to 20 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit (74 degrees Celsius).
  12. Remove from the oven. Garnish with fresh parsley before serving the chicken over the creamy garlic sauce.

Notes

  • For the crispiest skin, ensure the chicken is very dry before searing.
  • If your skillet is not oven-safe, transfer the chicken and sauce to a baking dish before the final bake.
  • If the sauce thickens too much while baking, add a splash more broth or cream.
