  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon Cajun seasoning (adjust to your spice preference)
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh parsley (for garnish)
  • Cooked white rice, for serving

Instructions

  1. Toss the chicken pieces with Cajun seasoning in a bowl.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the chopped onion to the same skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer.
  5. Reduce the heat to medium-low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and slightly thickened.
  6. Return the cooked chicken to the skillet. Stir in the frozen peas. Cook for 2 minutes until the peas are heated through.
  7. Serve the creamy Cajun chicken immediately over your cooked white rice. Garnish with fresh parsley.
