Creamy Avocado Pasta

A quick and simple pasta dish featuring a rich, smooth sauce made from fresh avocado, lemon, and garlic.

Ingredients

  • 12 oz pasta (spaghetti or linguine recommended)
  • 2 ripe avocados
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic
  • 1/4 cup fresh basil leaves
  • 1/4 cup water (or reserved pasta water)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Cook pasta according to package directions. Before draining, reserve about 1 cup of the starchy cooking water. Drain the pasta and set aside.
  2. While the pasta cooks, combine the avocados, lemon juice, garlic, basil, olive oil, salt, pepper, and red pepper flakes (if using) in a food processor or high-speed blender.
  3. Blend the ingredients until the sauce is completely smooth and creamy. Add the reserved pasta water, one tablespoon at a time, until the sauce reaches your desired consistency.
  4. Return the drained pasta to the pot or a large bowl.
  5. Pour the avocado sauce over the warm pasta. Toss gently until every strand is evenly coated with the green sauce.
  6. Serve immediately.

Notes

  • For a thinner sauce, add more reserved pasta water.
  • If you do not have fresh basil, use 1 teaspoon of dried oregano.
  • Taste and adjust salt and lemon juice before tossing with the pasta.
