2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
Zest of 1 large orange
1/2 cup fresh or dried cranberries
1/2 cup chopped walnuts
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
In a large bowl, mix the sugar, melted butter, eggs, milk, vanilla extract, and orange zest until combined.
Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
Gently fold in the cranberries and chopped walnuts.
Pour the batter into the prepared loaf pan.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
For a Costco copycat style, you can add a simple glaze made from 1/2 cup powdered sugar mixed with 2 tablespoons of orange juice, drizzled over the cooled bread.
If using dried cranberries, soak them in hot water for 10 minutes, then drain and pat dry before adding to the batter.
This bread freezes well. Wrap tightly in plastic wrap and foil once completely cool.
