You need a hearty, comforting meal fast? This ultra easy Cowboy Cornbread Casserole uses Jiffy Mix for a quick, cheesy topping over seasoned ground beef and corn. It is a perfect one pan family meal for busy weeknights.

  • 1 pound ground beef
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 can (10 ounces) diced tomatoes and green chilies (like Rotel), drained
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1 box (8.5 ounces) cornbread mix (like Jiffy), prepared according to package directions
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef until it is fully browned. Drain off any excess grease.
  3. Return the beef to the skillet. Stir in the drained corn, drained tomatoes and chilies, cream of mushroom soup, chili powder, cumin, salt, and pepper. Cook this mixture for about 5 minutes, stirring occasionally, until heated through.
  4. Spread the beef mixture evenly into the bottom of your prepared baking dish.
  5. Prepare the cornbread mix according to the package directions, usually involving adding an egg and milk. Do not add extra ingredients unless the package calls for them.
  6. Pour the prepared cornbread batter evenly over the beef mixture in the baking dish.
  7. Bake for 25 to 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the casserole from the oven. Sprinkle the shredded cheddar cheese over the top immediately. Let it sit for 5 minutes so the cheese melts.
  9. Cut into servings and enjoy your hearty ground beef casserole with cornbread topping.

Notes

  • For a Tex-Mex flavor boost, add 1/2 cup of drained black beans to the beef mixture.
  • If you like a spicier dish, add 1/4 teaspoon of cayenne pepper to the filling.
