This vibrant, flavor-packed Cowboy Caviar, also known as Texas Caviar, comes together fast. It is loaded with black beans, corn, fresh vegetables, and a zesty lime dressing, making it the ultimate crowd-pleasing dip or healthy side dish for any gathering.

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 cup cherry or grape tomatoes, halved
  • 1 red bell pepper, finely diced
  • 1/2 red onion, finely diced
  • 1 jalapeño, seeded and minced (optional)
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Prepare all your vegetables: rinse and drain the black beans and corn. Halve the tomatoes, dice the bell pepper and red onion, and mince the jalapeño if you are using it.
  2. In a large bowl, combine the black beans, corn, tomatoes, red bell pepper, red onion, jalapeño, and cilantro.
  3. In a separate small bowl, whisk together the dressing ingredients: olive oil, lime juice, cumin, salt, pepper, and garlic powder until well combined.
  4. Pour the zesty vinaigrette dressing over the bean and vegetable mixture.
  5. Gently toss everything together until all ingredients are evenly coated with the dressing.
  6. For the best flavor, cover the bowl and refrigerate for at least 30 minutes before serving. This allows the flavors to meld.
  7. Serve your Cowboy Caviar cold or at room temperature with plenty of tortilla chips.
