Ingredients
Scale
1/4 cup cottage cheese (full fat or low fat)
1 large egg
1 tablespoon unsweetened cocoa powder
1 tablespoon sweetener (like erythritol or monk fruit)
1 teaspoon coconut flour or almond flour
1/4 teaspoon vanilla extract
Pinch of salt
1 tablespoon dark chocolate chips (optional, for topping)
Instructions
Combine the cottage cheese and egg in a microwave-safe mug or small ramekin. Blend with a fork or immersion blender until completely smooth. You want no visible curds for the best texture.
Stir in the cocoa powder, sweetener, flour, vanilla extract, and salt until just combined. Do not overmix.
If using, sprinkle the chocolate chips on top.
Microwave on high for 60 to 90 seconds. Start checking at 60 seconds. Cooking time depends heavily on your microwave wattage. The brownie should look mostly set but still slightly moist in the center.
Let the brownie cool in the mug for at least 5 minutes before eating. This helps it firm up and prevents a rubbery texture.
Notes
For the fudgiest result, slightly undercook it. It will continue to set as it cools.
If your mixture seems too thick before microwaving, add 1 teaspoon of water or milk.
This recipe is a great low carb mug cake alternative when using sugar substitutes.
