Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin.
In a blender or food processor, combine the cottage cheese and eggs. Blend until the mixture is completely smooth. This step is key for that creamy texture!
Pour the egg mixture into a large bowl. Stir in the shredded cheese, salt, and pepper.
Fold in your chosen mix-ins gently.
Divide the mixture evenly among the 12 muffin cups, filling each about three-quarters full.
