You need this incredibly easy and creamy cornbread casserole recipe, perfect for Thanksgiving or any weeknight dinner. We use Jiffy mix to make this Southern comfort food side dish fast and delicious.

  • 1 box (8.5 oz) Jiffy Corn Muffin Mix
  • 1 can (15 oz) creamed corn, undrained
  • 1 can (15 oz) whole kernel corn, drained
  • 1 cup sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs, lightly beaten

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the Jiffy Corn Muffin Mix, creamed corn, and drained whole kernel corn. Mix until just combined.
  3. Add the sour cream and the lightly beaten eggs to the corn mixture. Stir everything together until the batter is uniform.
  4. Pour the melted butter over the batter in the bowl and mix gently until the butter is incorporated. Do not overmix.
  5. Pour the entire batter evenly into your prepared baking dish.
  6. Bake for 45 to 55 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Let the cornbread casserole cool for about 10 minutes before slicing and serving.

Notes

  • For a sweeter casserole, you can add 1/4 cup of granulated sugar to the batter before mixing.
  • If you want a richer flavor, substitute the sour cream with plain Greek yogurt.
