A recipe for making moist, chewy coconut macaroons with slightly crisp edges, finished with a simple salted dark chocolate drizzle.

  • 14 ounces sweetened condensed milk
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 cups sweetened flaked coconut
  • 4 ounces dark chocolate (60-70% cacao), chopped
  • 1 teaspoon coconut oil
  • Pinch of flaky sea salt for topping

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the sweetened condensed milk, egg whites, vanilla extract, and salt. Mix until just combined.
  3. Stir in the flaked coconut until all the coconut is evenly coated with the milk mixture.
  4. Drop rounded tablespoons of the mixture onto the prepared baking sheet, forming small mounds. Do not crowd the cookies.
  5. Bake for 15 to 18 minutes, or until the edges are golden brown. The tops should remain relatively pale.
  6. Remove the macaroons from the oven and let them cool completely on the baking sheet before moving them.
  7. Prepare the drizzle: Place the chopped dark chocolate and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted. Do not overheat.
  8. Transfer the melted chocolate to a small piping bag or a zip-top bag with a tiny corner snipped off.
  9. Drizzle the melted chocolate back and forth over the cooled macaroons.
  10. Immediately sprinkle a tiny pinch of flaky sea salt over the chocolate drizzle before it sets.
  11. Let the chocolate set completely before serving or storing.

Notes

  • For chewier macaroons, avoid overbaking; watch the edges for color rather than the tops.
  • If you do not have parchment paper, you can lightly grease the baking sheet, but parchment prevents sticking better.
  • If the chocolate seizes (becomes thick and grainy), stir in a few drops of neutral oil or more coconut oil to try and smooth it out.
